AÇAÍ Pumpkin Pie Chia Parfait

What You'll Need

For the Açaí:

2 Sambazon Pure Unsweetened Superfruit Packs

1 cup frozen blueberries

1 cup unsweetened almond milk

1/4 teaspoon cinnamon

For the Pumpkin Chia Pudding:

1 cup unsweetened almond milk

1/2 cup pumpkin puree

1/4 cup chia seeds

1 Tablespoon maple syrup

1/2 teaspoon pumpkin pie spice

How To Make It

For the pumpkin pie chia pudding, whisk all of the ingredients in a mixing bowl to combine. Set aside to allow the chia pudding to thicken, about 30 minutes, whisking occasionally.

When ready to assemble, blend the Açaí puree ingredients in a blender until smooth. The puree should be thick!

Layer a few spoonfuls of the Açaí in the bottom of two glasses. Top with the pumpkin pie chia pudding, then top with the rest of the Açaí. Garnish with fresh fruit (like figs!), granola and unsweetened coconut flakes.
