Ingredients for this Açaí Cookie Bars Recipe 

Here are the ingredients you will need to make this easy acai cookie bars recipe. Make sure to scroll down to the recipe card at the bottom of this post for the detailed ingredient measurements.  

  • SAMBAZON Unsweetened Frozen Açaí Superfruit Packs: I used the SAMBAZON Unsweetened packs for this recipe. It's well-portioned, packed with health, and easy to use! If you're using this brand too, you will need two packets for this recipe. A whole one will be reduced for the cookie bar dough and the other will need a portion for the icing. 
  • Butter: Use unsalted so that we can add the salt in separately. You will want the butter to be softened so pull it out of the fridge about 30 minutes before you begin the recipe. 
  • Brown Sugar and Granulated Sugar: help sweeten the dough. 
  • Egg: adds a thicker and creamier texture to the bars. 
  • Vanilla Extract: adds a nice flavor that complements the acai. 
  • Ground Cinnamon: Cinnamon pairs so well with Acai berries and really elevates that flavor. 
  • All-purpose Flour: is the base of the cookie bars. 
  • Baking Powder: helps the dough rise and makes it more airy. 
  • Salt: balances out the sweetness while enhancing all of the other flavors as well. 
  • Powdered Sugar: combines with acai liquid to make a delicious icing. 
  • Lemon Zest: adds a colorful and flavorful pop to the acai cookie bars recipe. 


How to make this Açaí Cookie Bars recipe 

This is how you can make these delicious acai cookie bars. Make sure to scroll down to the recipe card at the end of this page for the oven temp, bake times, and full step-by-step instructions!  

Make the Açaí Cookie Bars 

  1. Preheat your oven line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Reduce the first packet of SAMBAZON Açaí over medium heat. We want it to reduce to about 2 tablespoons of thick açaí puree.
  3. In a large bowl, cream together the softened butter, white sugar, and brown sugar until well combined. Add in the egg, vanilla extract, and the reduced acai puree until smooth. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  4. Pour the batter into the prepared baking pan and spread it evenly into the bottom of the pan.
  5. Place pan in the preheated oven and bake until a toothpick inserted into the center comes out with a few moist crumbs. Let the cookie bars cool completely in the pan to room temperature.

Make the Açaí icing 

  1. Combine the 2 tablespoons of açaí liquid from the other packet and the powdered sugar together in a medium bowl. Mix until well combined.
  2. Once cooled, top the cookie bars with the icing in an even layer, add a sprinkle of lemon zest, and let it set.
  3. When it's set, lift the cookie out of the pan using the parchment paper overhang. Cut into squares and enjoy!

How do I store leftover açaí cookie bars? 

To store, simply put your leftover bars into an airtight container and place them in the fridge. They should last for at least 3 or 4 days. Or you could freeze them for up to a month or two. I would suggest wrapping each bar in plastic wrap first before putting them in the container to help prevent freezer burn. 

Is this açaí cookie bars recipe healthy? 

They can be a healthier snack option than others out there, especially if you use wholesome ingredients. Açaí berries are rich in antioxidants and can add nutritional value to the bars. 

This recipe does use real sugar and butter so it wouldn't be considered a diet food but everything in moderation!
